🥖 French Rolls with Pulp

Sustainable baking: Delicious rolls made from Kuvings pulp

Have you ever wondered what to do with the leftover pulp after juicing? These homemade rolls are the perfect answer! Whether it's carrot, spinach, or apple – give your baked goods a healthy twist.

 The original recipe makes 16 rolls.

(The quantity can be adjusted as desired!)

📋 Ingredients:

  • 💧 350ml warm water (approx. 45°C)
  • 🍞 15g active dry yeast
  • 🍬 30g sugar
  • 🌻 30ml vegetable oil
  • 🧂 1 tsp (5g) salt
  • 🌾 500g bread flour
  • 🥕 250g pulp (carrot, spinach, apple, etc.)
💡 Tip: Vegetable pulp is straightforward. For fruit pulp (e.g., apples or oranges), it is recommended to peel and core the fruit before juicing so the pulp tastes perfect in the dough.

✨ Instructions

Mix the water, yeast, and sugar in a large bowl. Let it rest for about 10 minutes until the mixture is creamy and active.

Stir in the oil, salt, and half of the flour. Gradually add the remaining flour until the dough is no longer sticky. Knead on a floured surface for 8 minutes. Once the dough is smooth, knead in the pulp. Cover and let it rise in an oiled bowl for about 1 hour (until doubled in size).

Briefly knead the dough, divide it into 16 pieces, and form them into balls. Place them on a baking sheet with 5 cm of space between each. Cover and let rise for another 40 minutes. Preheat the oven to 200°C.

Bake in the preheated oven for 18 to 20 minutes until golden brown.
